Lynn Spor, a member of the Wheaton R-3 School District food service team, earned second place honors in the Opaa Signature Recipe Contest on May 3. The final competition was held at Southern Boone County High School in Ashland.
Food service professionals from 82 school districts participated in the contest, which challenged contestants to create a new recipe for Missouri school lunch programs that includes lean beef.
"I have 10 children and serve nothing that is made from a box," said Spor. "My kids like fajitas, but I thought they needed something to jazz them up, so I created a fruit salsa recipe. It was just an experiment, but they loved it."
Spor's creative beef fajita wrap with fruit salsa and barbecue ranch dressing was well received by students attending Southern Boone County High School.
"I also made this dish for the teachers at Wheaton, and they really liked it as well," said Spor.
Spor was one of nine finalists to compete in the final round of the contest. A panel of student judges evaluated each recipe based on appearance, taste, texture and quality.
As a second place winner in the Signature Recipe Contest, Spor received a box of steaks.
Spor has served in the Wheaton R-3 School District food service department for one year. She has been an employee of Opaa for two years.
Beef fajita wrap with
fruit salsa and barbecue
1 cup diced pears drained
1 cup diced apricots drained
1 cup diced strawberries
2 tablespoons jalepeno finely chopped
1/4 cup diced onion
1/8 cup honey
1 tablespoon cilantro
Mix fruit, jalepeno, onion, honey and cilantro. Chill.
Barbecue ranch dressing:
1 cup ranch dressing
1/8 cup barbecue sauce
Combine ingredients and mix well.
To assemble wraps, place dressing, lettuce and lean beef in tortilla. Top with salsa, roll and serve chilled. Wraps can be garnished with grated cheddar cheese.
